Juntar com a gemada (deixar cair em fio).&lt;br /&gt;Cozer em banho-maria, sobre lume brando, durante uns minutos, sem deixar de bater. Retirar o tacho do lume e colocar num reciciente com água fria e mexer até arrefecer. Quando entrar em ebulição, deitar o arroz carolino. Quando o arroz tiver absorvido a água, reduzir o lume para o mínimo. A partir daqui o arroz vai cozer sempre em lume brando.&lt;br /&gt;Juntar um pouco do leite que está a ferver. O leite deve ser acrescentado aos poucos. Juntar a casca de limão e o pau de canela e a colher de manteiga. Adicionar o açúcar e o leite creme desfeitos no restante leite frio. Deixar ferver 1 minuto. Retirar do lume. Retire para o lado e junte então a farinha, mexendo bem com uma colher de pau , sempre em lume brando. Mexa energicamente até a massa formar uma bola compacta que se descola das paredes do tacho e deixe-a arrefecer. Quando estiver fria estenda-a com o rolo, polvilhando a mesa com farinha para não pegar. Coloque o recheio, dobre a massa e corte os rissóis com o corta-massas.&lt;br /&gt;Para fazer o recheio: Deite num tachinho o azeite, a margarinha e a cebola bem cortada e leve tudo a refogar em lume brando, até começar a alourar. Junte a farinha, mexa e a seguir junte o leite, a polpa de tomate e o cubo de caldo de marisco. Juntar a carne picada e deixar corar um pouco. Acrescentar a polpa de tomate .&lt;br /&gt;Refrescar com o vinho e juntar o caldo de carne. Temperar com sal, pimenta e aguardar que cozinhe, por dez minutos. Barrar um recipiente com azeite e colocar , alternadamente , o molho bechamel , a carne, o queijo e as folhas da lasanha.&lt;br /&gt;Repetir , até esgotar os ingredientes, sendo as últimas camadas de molho bechamel e queijo. Polvilhar a supervicie com canela e levar ao forno pré-aquecido. Bate-se os ovos com o açúcar durante 30 minutos, usando para isso a batedeira eléctrica.&lt;br /&gt;Antes de se bater os ovos com o açúcar acende-se o forno&lt;br /&gt;Passando os 30 minutos desliga-se a batedeirae junta-se ao creme de ovos, a farinha previamente peneirada. Mexe-se delicadamente, para que a farinha se incorpore no creme. Num tacho junte as gemas e o leite condensado e leve ao lume brando mexendo sempre. Depois de bem misturado adicione o queijo continuando a mexer até engrossar. Junte as claras batidas e reserve. Junte o café , o cacau e o licor e molhe os palitos "la reine". Cubra o fundo de uma forma de vidro com os palitos e por cima com o creme, alternado a última camada tem de ser de creme.
